**1. Sauté your base.**
In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté until soft and fragrant—about 5 minutes.

**2. Add remaining veggies.**

**3. Pour in broth and tomatoes.**
Add the canned tomatoes with their juice, vegetable broth, and herbs. Stir everything together.

**4. Simmer to perfection.**
Bring the soup to a boil, then reduce heat and let simmer uncovered for about 20–30 minutes, or until veggies are tender.

**5. Add greens (if using).**
Stir in spinach or kale during the last 5 minutes of cooking.

**6. Taste & serve.**
Adjust salt and pepper, then ladle into bowls and top with fresh herbs if you’re feeling fancy.
